How adorable are these Bird's Nest Cookies? I'll be the first to admit that I have a bit of a sweet tooth, (and a slight obsession with colored eggs) so when I was flipping through my big cookie cookbook and came across these I just had to make them. If you wanted to, you could substitute small jelly-beans as the "eggs" as well.
Bird's Nest Cookies
Recipe adapted from: The Great American Cookie Cookbook
1 1/3 cups flaked coconut
1 cup (2 sticks) butter or margarine,
softened
1 large egg
½ cup granulated sugar
½ tsp real maple syrup
2 cups all purpose flour
¾ tsp salt
1 ¾ cups mini M & M's candies
(divided)
Preheat oven to 300*F. Spread coconut
on ungreased cookie sheet. Toast in oven, stirring occasionally until
lightly golden. Remove coconut from cookie sheet and set aside.
Increase oven temperature to 350*F. In large bowl cream butter and
sugar until light and fluffy; beat in egg and maple syrup. In medium
bowl combine flour and salt; blend into creamed mixture. Stir in 1
cup mini M&M's. Form dough into 1 inch balls. Roll heavily in
toasted coconut. Place 2 inches apart on lightly greased cookie
sheets. Make indentation in center of each cookie with thumb. Bake
12-14 minutes or until coconut is golden brown. Remove cookies to
wire racks and fill indentations immediately with remaining mini
M&M's using a small amount for each cookie. Cool completely and
enjoy!
